When Jen use to have more time, she would make this delicious Rocky Road from a recipe her good friend Tash Healy gave her a long time ago for lucky family and friends at Christmas time. Mmmm, it is SO good!
Ingredients
250 grams marshmallows
1 cup unsalted peanuts
½ cup raspberry lollies
1 cup shredded coconut
350 grams chocolate dark or milk
Method
Line the base of a 20cm cake tin with baking paper. Put marshmallows, peanuts, cherries or alike and coconut in a bowl (chop to desired sizes) and mix.
Melt chocolate and mix with dry ingredients. Spoon into tin and refridgerate for a few hours.
Serve with a glass of Pfeiffer Christopher’s VP.
