Seriously Pink Baked Pears

2 cups Pfeiffer Seriously Pink
2 vanilla beans
4 pears
1 cup sugar

Preheat the oven to 180°C.  Peel the pears.  Remove the cores and leave the stems on.  Split the vanilla beans and place in heavy-based pan with Seriously Pink, slowly bringing to the boil and reducing to a simmer.

Simmer for 5 minutes.  Stand and cool for 5 minutes.  Remove the vanilla beans and scrape the seeds into the Seriously Pink juice.

Cut the pears into halves and place in an oven proof dish or tray, then pour the pink mixture over the pears and sprinkle with the sugar.

Bake for 15 minutes or until pears are tender and golden.

Serve the pears with a drizzle of the Seriously Pink that has pooled around the pears and a dollop of Greek vanilla yogurt or vanilla ice cream.  Enjoy with a glass of Pfeiffer Frontignac.
