Jen Pfeiffer’s Pasta Sauce

olive oil
2 brown onions, finely diced
½ bulb (~8-10 cloves) garlic, finely diced
1 little red hot chilli, finely diced (or 1 teaspoon chilli in jar)
2/3 cup fresh oregano, finely chopped (or 2 teaspoons dried oregano)
1/3 cup fresh basil, finely chopped (or 1 teaspoon dried basil)
2 celery sticks, finely chopped
½ green capsicum, finely diced
½ red capsicum, finely diced
½ yellow capsicum, finely diced
1 carrot, grated
4 cans of your “pfavourite” tinned tomatoes
glug of Pfeiffer Carlyle Shiraz

Brown off the onions, garlic and chilli in some olive oil. Add the remaining ingredients and simmer until the tomatoes are well softened.

To Serve
Serve the sauce with your “pfavourite” pasta. Add some parmesan cheese and fresh herbs (optional) and enjoy with the resto of the Pfeiffer Carlyle Shiraz.
